Preparation Steps
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked and shredded chicken, cream of chicken soup, sour cream, half of the shredded cheddar cheese, mixed vegetables, and finely chopped onion. Season with salt and pepper to taste. Mix until well combined.
- In a separate bowl, combine the crushed buttery crackers with melted butter. Stir until the crackers are evenly coated.
- Spoon the chicken mixture into the prepared casserole dish and spread evenly. Sprinkle the cracker mixture over the top.
- Sprinkle the remaining shredded cheddar cheese over the cracker topping.
- Cover the casserole dish with aluminum foil and bake for 25 minutes.
- Remove the foil and continue baking for an additional 10-15 minutes, or until the topping is golden brown and the edges are bubbling.
- Allow cooling for a few minutes before serving warm.
