- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add diced red bell pepper, jalapeño, and minced garlic. Sauté for 2–3 minutes until tender.
- Add the cooked chicken, paprika, cayenne pepper, ground black pepper, and salt. Stir to combine and cook for another 2 minutes.
- Mix in the cream cheese and cheddar-jack cheese until melted and creamy. Let it cool slightly.
- Spoon the filling into each tortilla and roll tightly, tucking in the sides.
- Heat 3–4 cups of oil in a deep skillet over medium-high heat until reaching 350°F. Fry the wraps for 3–4 minutes until golden brown.
- Transfer the fried wraps onto a plate lined with paper towels to drain excess oil.
- Serve hot with chopped lettuce, diced tomatoes, and your favorite dipping sauce.
