  • 1 cup Mashed Bananas overripe for maximum sweetness
  • 1/3 cup Butter melted
  • 1 large Egg or flax egg for vegan option
  • 1/2 cup White Sugar reduce for less sweetness
  • 1/4 cup Oil melted coconut oil is a good option
  • 1 cup Chocolate Chips optional
  • 1/2 cup Walnuts optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Mash ripe bananas in a mixing bowl until smooth. Melt butter and mix it with the mashed bananas.
  3. Add Bisquick, sugar, oil, and a beaten egg into the banana mixture and mix until just combined.
  4. Fold in chocolate chips and walnuts if desired, reserving some chocolate chips for later.
  5. Fill each muffin cup halfway with batter and sprinkle reserved chocolate chips on top.
  6. Bake for approximately 15 minutes until golden brown and a toothpick comes out clean.
  7. Remove from oven, cool in tin for 5 minutes, then transfer to a wire rack.
