- Start by combining your choice of flank or sirloin steak with olive oil and a handful of fresh herbs in a bowl. Coat the steak evenly and let it marinate for at least 15 minutes or up to 1 hour in the refrigerator.
- While the steak marinates, wash and slice the zucchini into 1/4-inch thick rounds. Set the zucchini aside.
- Preheat your grill or cast iron skillet over medium-high heat. Place the marinated steak on the grill and cook for 4-5 minutes on each side for a perfect medium-rare finish. Add the zucchini slices to the grill, cooking for about 3-4 minutes per side.
- Once the steak is cooked to your liking, remove it from the grill and let it rest for 5 minutes on a cutting board.
- Begin assembling your bowl by placing a generous scoop of brown rice or quinoa at the base. Top it with sliced steak and grilled zucchini. Sprinkle fresh herbs over the top and add crumbled feta cheese if desired.
