Step-by-Step Instructions
  1. Start by combining your choice of flank or sirloin steak with olive oil and a handful of fresh herbs in a bowl. Coat the steak evenly and let it marinate for at least 15 minutes or up to 1 hour in the refrigerator.
  2. While the steak marinates, wash and slice the zucchini into 1/4-inch thick rounds. Set the zucchini aside.
  3. Preheat your grill or cast iron skillet over medium-high heat. Place the marinated steak on the grill and cook for 4-5 minutes on each side for a perfect medium-rare finish. Add the zucchini slices to the grill, cooking for about 3-4 minutes per side.
  4. Once the steak is cooked to your liking, remove it from the grill and let it rest for 5 minutes on a cutting board.
