  4. Remove the hot baking pan, line it with parchment paper, and spread the sweet potato cubes in a single layer.
  5. Roast for about 20-25 minutes until edges are dark golden brown.
  6. Add minced garlic and parmesan cheese on top of the potatoes and roast for another 8-10 minutes.
  7. Garnish with finely chopped fresh parsley and serve immediately.
