  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
For the Topping
  • 1/2 cup Parmesan cheese, grated or use nutritional yeast for dairy-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the shrimp, sliced zucchini, and halved cherry tomatoes. Drizzle with olive oil, add minced garlic, salt, and pepper. Toss until well-coated.
  3. Spread the shrimp and vegetable mixture evenly on a large rimmed baking sheet, leaving space between the pieces.
  4. Bake in the preheated oven for 10-12 minutes until shrimp are opaque and vegetables are tender.
  5. Remove from oven, sprinkle Parmesan cheese over the shrimp and zucchini, and return to oven for an additional 2 minutes until cheese melts.
  6. Garnish with freshly chopped basil and serve immediately.
