For the Cheesecake Filling
  • 8 ounces Fat-Free Cream Cheese softened
  • 1 cup Non-Fat Vanilla Greek Yogurt
  • 1 teaspoon Vanilla Extract use fresh for best taste
  • 1 pinch Salt
  • 1 cup Low Fat Cool Whip thawed
For the Base
  • 12 pieces Oreo Thins

Method
 

Preparation Instructions
  1. Prepare a muffin tin with 12 paper cupcake liners and place one Oreo Thin at the bottom of each liner.
  2. In a mixing bowl, beat the softened fat-free cream cheese until smooth for about 2-3 minutes.
  3. Mix in a pinch of salt, vanilla extract, and non-fat vanilla Greek yogurt until well combined, approximately 2 minutes.
  4. Fold in the crushed Oreo Thins and thawed Cool Whip gently until distributed.
  5. Fill each cupcake liner three-quarters full with the creamy cheesecake mixture and top with additional crushed Oreo Thins if desired.
  6. Freeze the muffin tin for a minimum of 3 hours to set the bites.
