  1. Begin by preheating a nonstick pan over medium heat. While the pan warms, cut the salmon into four equal portions, ensuring even cooking.
  2. Add the salmon portions to the heated pan, searing them for about 4-5 minutes on each side. Look for a golden brown crust to signify they’re perfectly cooked through; they should flake easily with a fork.
  3. In the same pan, reduce the heat to low and melt 2 tablespoons of butter. Add the minced garlic, stirring for about 30 seconds until fragrant; be careful not to burn it.
  4. Gradually stir in 1 cup of milk and 1 tablespoon of cornstarch, mixing until the sauce thickens, which should take 3-4 minutes.
  5. Now, stir in the chopped spinach, halved cherry tomatoes, and sun-dried tomatoes, allowing them to cook for another 3-4 minutes.
