Method
 

Directions
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  2. Incorporate thawed and drained spinach, stirring to combine. Cook for about 2–3 minutes, then season with salt and pepper. Mix in sour cream until thoroughly coated.
  3. Preheat your oven to 175°C (347°F). Pat salmon fillets dry, season with salt and pepper. Sear skin-side down for about 2 minutes on medium-high heat.
  4. Lightly grease a baking dish and place the seared salmon fillets skin-side down. Spoon the creamy spinach mixture over each fillet. Sprinkle mozzarella cheese on top.
  5. Bake for 15–20 minutes or until salmon is opaque and flakes easily. Watch for cheese to turn golden.
  6. Remove from oven and let sit for a few minutes before serving.
