- In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
- Incorporate thawed and drained spinach, stirring to combine. Cook for about 2–3 minutes, then season with salt and pepper. Mix in sour cream until thoroughly coated.
- Preheat your oven to 175°C (347°F). Pat salmon fillets dry, season with salt and pepper. Sear skin-side down for about 2 minutes on medium-high heat.
- Lightly grease a baking dish and place the seared salmon fillets skin-side down. Spoon the creamy spinach mixture over each fillet. Sprinkle mozzarella cheese on top.
- Bake for 15–20 minutes or until salmon is opaque and flakes easily. Watch for cheese to turn golden.
- Remove from oven and let sit for a few minutes before serving.
