- Start by lining a baking tray with parchment paper, ensuring the paper extends slightly over the edges for easy removal later. Set the tray aside while you move on to melting the chocolate.
- In a double boiler, fill the bottom pot with water and bring to a gentle simmer over medium heat. Add dark chocolate to the top pot, stirring occasionally until melted - about 5-7 minutes.
- Once melted, pour the dark chocolate onto the prepared parchment-lined tray. Spread the chocolate evenly into a rectangle about 1/4 inch thick.
- Quickly sprinkle the chopped pistachios, dried cranberries, and dried cherries over the surface of the warm chocolate, gently pressing them in.
- Allow the bark to cool at room temperature for 1-2 hours. Alternatively, place in the refrigerator for 30 minutes.
