- Preheat the oven to 350°F (175°C), grease a 9x5-inch loaf pan, and dust it with flour.
- Mash 2-3 overripe bananas until smooth and mix in the granulated and brown sugar, melted butter, brewed coffee, eggs, and vanilla extract until creamy.
- In another bowl, whisk together baking soda, salt, and all-purpose flour. Create a well in the center.
- Pour the dry ingredients into the wet banana mixture. Fold gently until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
