- Preheat the Oven to 375°F (190°C) and grease a baking dish.

- Sauté diced onions in a skillet over medium heat for about 5 minutes until soft.

- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, and pepper. Mix gently.

- Transfer the mixture into the prepared baking dish and shape into a loaf.

- Sprinkle the remaining Parmesan cheese on top, and optionally, add paprika or Italian seasoning.

- Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C).
