Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs, melted butter, and cocoa powder. Press into the bottom of the pan and bake for 10 minutes.
  3. Melt the semi-sweet chocolate until smooth and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth and creamy.
  5. Add granulated sugar and cocoa powder, then eggs one at a time, mixing gently. Add vanilla extract, sour cream, melted chocolate, and heavy cream.

  7. Turn off the oven and let the cheesecake cool inside for 1 hour.
  8. Cover and refrigerate for at least 6 hours, preferably overnight.
  9. To make the ganache, heat heavy cream and pour over chocolate chips; stir until smooth.
  10. Pour the ganache over the chilled cheesecake and refrigerate for an additional 30 minutes.
