  • 2 cups Zucchini grated
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped
  • 1/2 cup Parmesan Cheese grated
  • 1 cup Bread Crumbs gluten-free if desired
  • 1 large Egg beaten
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Method
 

Directions
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine the drained zucchini, minced garlic, parsley, Parmesan, breadcrumbs, salt, pepper, and beaten egg. Mix well.
  4. Form small balls from the mixture and place them evenly on the prepared baking sheet.
  5. Bake for 20-25 minutes, turning halfway through for even browning.
  6. For extra crispiness, air fry at 375°F for an additional 5 minutes.
  7. Allow to cool slightly before serving warm with your favorite dips.
