Ingredients
  

For the Cake
  • 2 tbl Instant Coffee Powder Granules can be ground into powder for better mixing.
  • 2 cups Plain Flour Use self-raising flour for a lighter texture.
  • 2 tsp Baking Powder
  • 1 cup Soft Light Brown Sugar Can be substituted with granulated sugar.
  • 1/2 cup Margarine or Butter Ensure it is soft for easy blending; unsalted butter is preferred.
  • 2 medium Eggs Can be substituted with egg replacers in vegan versions.
  • 1 cup Milk
  • 1/2 tsp Salt
For the Buttercream
  • 1 cup Butter Should be at room temperature.
  • 4 cups Icing Sugar
  • 1 tsp Vanilla Extract
  • 2 tbl Boiling Water Used to activate the coffee powder.

Method
 

Preparation
  1. Preheat your oven to 160ºC (140ºC fan).
  2. Line two 20cm round sandwich tins with greaseproof paper.
  3. In a large mixing bowl, combine all cake ingredients and blend until smooth.
  4. Divide batter evenly and bake for 30-35 minutes.
  5. Allow cakes to cool in their tins for 10 minutes before transferring to a wire rack.
Buttercream Preparation
  1. Dissolve instant coffee in boiling water and let it cool.
  2. Beat room temperature butter with vanilla extract until smooth.
  3. Gradually sift in icing sugar, mixing until smooth, then add cooled coffee mixture.
Assembly
  1. Place one cake layer on serving plate and spread one-third of buttercream on top.
  2. Add the second layer and top with remaining buttercream.
  3. Optionally, pipe decorative buttercream around edges.
