  • 0.25 cups Granulated Sugar
  • 0.25 cups Brown Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 0.75 cups Mashed Ripe Bananas About 2 small bananas
  • 0.5 cups Chopped Walnuts Optional; can substitute with chocolate chips
For the Cream Cheese Glaze
  • 4 ounces Cream Cheese Softened
  • 1 cups Powdered Sugar
  • 1-2 tablespoons Milk Adjust based on desired glaze consistency
  • 0.5 teaspoon Vanilla Extract

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar with a hand mixer until fluffy.
  4. Beat in egg and vanilla extract, then mix in mashed ripe bananas until smooth.
  5. Gradually fold in the dry mixture until just combined; if using, fold in the chopped walnuts.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes until edges are lightly golden; let cool for about 5 minutes.
  8. While cookies cool, prepare the cream cheese glaze by mixing cream cheese, powdered sugar, milk, and vanilla until smooth.
  9. Drizzle the glaze over cooled cookies and serve.
