For the Ribs

Method
 

Cooking Steps
  1. Heat 5 tablespoons of oil in a non-stick saucepan over medium heat. Add 1/3 cup of finely chopped garlic and fry until golden brown for 2-3 minutes. Remove and drain garlic on paper towel, reserving the oil.
  2. Bring a large saucepan of water to a boil. Add 1 kg of pork ribs, cooking for 5 minutes. Drain and rinse ribs under cold water.
  3. Combine rinsed ribs, 3 slices of ginger, 2 tablespoons of soy sauce, 1/2 tablespoon of oyster sauce, 1 teaspoon of sugar, 4 tablespoons of rice wine, and 2 cups of water in the saucepan. Simmer over medium heat covered for 60 minutes.
  4. Remove lid and increase heat to medium-high. Cook uncovered, allowing sauce to thicken and coat the ribs, incorporating reserved garlic oil, for 5-10 minutes until browned.
  5. Stir in 4-5 tablespoons of chili powder and mix in the fried garlic thoroughly to coat each rib.
