Ingredients
  

For the Chicken
  • 2 pieces Boneless, skinless chicken breasts pound to ¾-inch thick
  • 2 tablespoons Olive oil or avocado oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika can use regular paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
For the Toppings
  • 4 slices Thick-cut bacon or turkey bacon
  • ½ cup Mayonnaise avocado oil mayo recommended
  • 2 tablespoons Fresh lime juice or lemon juice
  • ¼ cup Fresh cilantro chopped
  • 1 large Avocado ripe but firm
  • 1 medium Tomato sliced into ¼-inch rounds
  • ¼ medium Red onion thinly sliced
  • 4 leaves Lettuce leaves Romaine or butter lettuce recommended
For the Bread
  • 4 slices Bread slices sourdough or ciabatta

Method
 

Prepare the Chicken
  1. Place chicken breasts between two sheets of plastic wrap and pound to ¾-inch thickness. Season with olive oil, garlic powder, smoked paprika, salt, and black pepper. Let rest for 10 minutes.
Cook the Chicken
  1. Grill the chicken breasts for 6-7 minutes on each side until cooked through and internal temperature reaches 165°F. Let rest before slicing.
Cook Bacon
  1. Cook bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to paper towels to drain.
Make the Spread
  1. Combine mayonnaise, lime juice, and chopped cilantro in a bowl and whisk until smooth. Adjust seasoning as needed.
Toast Bread
  1. Toast bread slices until golden brown, about 2-3 minutes per side, optionally using leftover bacon fat for extra flavor.
Assemble Sandwich
  1. Spread cilantro-lime mayo on toasted bread and layer with lettuce, tomato, grilled chicken, bacon, avocado, and red onion. Top with another slice of bread.
