- In a large mixing bowl, combine the shredded gold potatoes, shredded broccoli, diced deli ham, and shredded cheddar cheese. Stir gently until evenly mixed.
- Sprinkle the all-purpose flour over the potato mixture and stir well to coat all the ingredients evenly.
- In a separate bowl, beat the two eggs and 1/4 cup of milk together until fluffy and well combined. Fold this into your potato mixture.
- Add 1/2 teaspoon each of salt, black pepper, and garlic powder to the potato batter. Stir carefully to incorporate the seasonings.
- Set your waffle iron to preheat according to the manufacturer's instructions, usually around medium heat.
- Scoop about 2/3 to 1 cup of the potato mixture into the preheated waffle iron. Cook for about 6-7 minutes.
- Once cooked, remove the Loaded Potato Waffles from the waffle iron. Top with additional cheese or a poached egg if desired.
