For the Waffle Batter
  • 3 medium gold potatoes shredded and squeezed dry
  • 1 cup broccoli slaw shredded or packaged
  • 1 cup cheddar cheese shredded
  • 1 cup deli ham diced from about 3 medium slices
  • 3 tablespoons all-purpose flour
  • 2 large eggs beaten
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Directions
  1. In a large mixing bowl, combine the shredded gold potatoes, shredded broccoli, diced deli ham, and shredded cheddar cheese. Stir gently until evenly mixed.
  2. Sprinkle the all-purpose flour over the potato mixture and stir well to coat all the ingredients evenly.
  3. In a separate bowl, beat the two eggs and 1/4 cup of milk together until fluffy and well combined. Fold this into your potato mixture.
  4. Add 1/2 teaspoon each of salt, black pepper, and garlic powder to the potato batter. Stir carefully to incorporate the seasonings.
  5. Set your waffle iron to preheat according to the manufacturer's instructions, usually around medium heat.
  6. Scoop about 2/3 to 1 cup of the potato mixture into the preheated waffle iron. Cook for about 6-7 minutes.
  7. Once cooked, remove the Loaded Potato Waffles from the waffle iron. Top with additional cheese or a poached egg if desired.
