  • 4 large Russet Potatoes Scrubbed clean
  • 2 tablespoons Olive Oil Can substitute with melted butter

  • 2 cups Cooked Pot Roast Finely shredded
  • 4 tablespoons Unsalted Butter Feel free to use salted if preferred
  • 1/2 cup Sour Cream Greek yogurt is a great alternative
  • 1/4 cup Milk Whole or 2% milk, or plant-based option
  • 1 cup Sharp Cheddar Cheese Gruyère or Monterey Jack can be used as substitutes
  • 1/4 cup Pot Roast Gravy Optional if unavailable
  • 1 teaspoon Garlic Powder Fresh minced garlic can also be used
  • 1 teaspoon Onion Powder Fresh chopped onion can also be used
  • 1/2 teaspoon Black Pepper Freshly ground is preferred
For Garnish
  • 2 tablespoons Fresh Chives Can be replaced with green onions or omitted

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pierce each russet potato several times with a fork, rub with olive oil and sprinkle with sea salt. Bake for 60-75 minutes until soft.
  2. Lower the oven temperature to 375°F (190°C). Slice the cooled potatoes lengthwise and scoop out the fluffy flesh. Mix with unsalted butter, sour cream, milk, pot roast, cheddar, garlic powder, onion powder, and black pepper until creamy.
  3. Spoon the filling back into the potato skins, mound slightly, and top with remaining cheddar. Bake for 20-25 minutes until cheese is melted and bubbly.
  4. Remove the potatoes from the oven, allow to cool slightly, garnish with chives, and serve hot.
