- Preheat your oven to 400°F (200°C). Pierce each russet potato several times with a fork, rub with olive oil and sprinkle with sea salt. Bake for 60-75 minutes until soft.
- Lower the oven temperature to 375°F (190°C). Slice the cooled potatoes lengthwise and scoop out the fluffy flesh. Mix with unsalted butter, sour cream, milk, pot roast, cheddar, garlic powder, onion powder, and black pepper until creamy.
- Spoon the filling back into the potato skins, mound slightly, and top with remaining cheddar. Bake for 20-25 minutes until cheese is melted and bubbly.
- Remove the potatoes from the oven, allow to cool slightly, garnish with chives, and serve hot.
