  • 1 can Black Beans drained and rinsed
  • 1 cup Corn fresh, frozen, or canned
  • 1 medium Red Bell Pepper diced
  • 1 medium Orange Bell Pepper diced, optional
  • 1/2 medium Red Onion soaked in cold water for 10 minutes
  • 1 cup Cherry Tomatoes halved
  • 1 medium Avocado diced, drizzle with lime juice
  • 1/2 cup Cotija Cheese or feta cheese
  • 1/4 cup Fresh Cilantro chopped
For the Dressing
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/2 cup Sour Cream or more Greek yogurt
  • 1/4 cup Buttermilk or milk mixed with vinegar
  • 2 tablespoons Lime Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder adjust for spice preference

For Toppings
  • 1 cup Tortilla Strips
  • 1/4 cup Pickled Jalapeños adjust to taste

Step-by-Step Instructions
  1. In a blender, combine the mayonnaise, sour cream, buttermilk, fresh cilantro, lime juice, garlic, ground cumin, and chili powder. Blend until smooth and refrigerate for 30 minutes.
  2. Rinse and chop the romaine lettuce into bite-sized pieces. Drain and rinse black beans. Prepare corn as needed, and chop the bell peppers, onion, and tomatoes.
  3. In a large mixing bowl, combine all chopped ingredients: romaine lettuce, black beans, corn, bell peppers, red onion, tomatoes, and avocado. Gently fold together.
  4. Lightly toss the combined ingredients using two serving spoons to maintain their integrity.
  5. Drizzle the chilled dressing over the salad mixture and toss lightly to coat. Add more dressing if desired.
  6. Serve immediately for the best flavor or store salad and dressing separately until ready to serve.
  7. Before serving, add toppings like tortilla strips, pickled jalapeños, and optional proteins.
