- Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
- Mash ripe bananas in a mixing bowl until smooth.
- Add eggs, maple syrup, and almond milk to the mashed bananas and mix thoroughly.
- Fold in the rolled oats and let them soak in the banana mixture for 2-5 minutes.
- In a separate bowl, mix whole wheat pastry flour, cinnamon, baking powder, and baking soda. Gradually add to the banana mixture.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the oven for 45-55 minutes or until a toothpick comes out mostly clean.
