Step-by-Step Instructions
  1. In a mixing bowl, combine chicken breast cubes with salt, pepper, Cajun seasoning, and olive oil. Toss until evenly coated. Let sit for 5 minutes while heating the skillet.
  2. Heat a large skillet over medium heat for 2 minutes. Add the seasoned chicken in a single layer and sauté for 5-7 minutes until golden and cooked through.
  3. In the same skillet, add onions and cook for 2 minutes until soft. Add broccoli, zucchini, and bell peppers, and stir-fry for 3-4 minutes.
  4. Pour in chicken stock to deglaze the skillet, scraping up browned bits. Return cooked chicken and stir to combine. Cook for another 2-3 minutes.
  5. Remove from heat, sprinkle with red chili pepper flakes if desired, and garnish with parsley. Serve immediately.
