- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, dill, mint, lemon zest, and a pinch of black pepper.
- Lay two sheets of phyllo pastry on a clean surface and brush with olive oil. Cut into long strips.
- At the end of each phyllo strip, add about one tablespoon of the feta filling, then fold and roll it tightly.
- Arrange the rolls on the baking sheet and brush the tops with more olive oil. Bake for 18-20 minutes.
- In a small saucepan, combine honey, chili flakes, and lemon juice over low heat for 3-5 minutes.
- Remove the rolls from the oven and drizzle with warm chili honey before serving.
