Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Prepare your springform pan with aluminum foil and baking spray.
- Soak raisins in boiling water for about 10 minutes, then drain and pat dry.
- Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg; set aside.
- In a large bowl, whisk eggs and sugars until fluffy. Add oil, buttermilk, vinegar, and vanilla, mixing well.
- Fold dry ingredients into wet mixture. Gently fold in carrots, walnuts, and raisins.
- Beat cream cheese until smooth. Add sugar and flour, mixing before adding spices and eggs, followed by vanilla and sour cream.
- Pour cheesecake batter over carrot cake layer. Swirl the two batters for a marbled effect.
- Set the springform pan in a larger roasting pan filled with hot water. Bake for 60–70 minutes.
- Turn off the oven, crack the door open, and let the cheesecake cool for about 1 hour.
- Refrigerate the cheesecake for at least 6 hours, preferably overnight.
- Whisk together topping ingredients until smooth. Spread over chilled cheesecake and garnish with walnuts.
