Step‑by‑Step Instructions for Cucumber Mint Mocktail
- Start by washing and chopping the large English cucumber into smaller pieces, then add it to your high-speed blender. Along with the cucumber, toss in the fresh ginger, fresh mint leaves, agave syrup, and 2 cups of filtered water. Blend on high for about 1-2 minutes until the mixture is smooth and creamy.
- Once blended, place a fine mesh strainer or cheesecloth over a bowl or pitcher. Carefully pour the cucumber mixture through the strainer to separate the juice from the pulp. Press down gently on the pulp with the back of a spoon to extract as much liquid as possible.
- Take a few tall glasses and fill each one with ice cubes. For an extra touch, add thinly sliced pieces of cucumber to the glasses.
- Carefully pour the freshly strained cucumber juice into the prepared glasses filled with ice, filling them about three-quarters full.
- Top each glass with club soda, filling them up to the rim while allowing the bubbles to enhance the refreshing experience. Finally, garnish with a sprig of fresh mint and perhaps a slice of cucumber on the rim to add a pop of color.

Notes
Store any leftover cucumber juice in an airtight container for up to 3-4 days. Avoid adding club soda until ready to serve to maintain carbonation.
