Simple Syrup Preparation
- In a medium saucepan, combine equal parts sugar and water over medium heat. Stir frequently until the sugar dissolves completely, about 3-5 minutes.
- Add a handful of fresh rosemary, letting it steep for 10-20 minutes until aromatic. After steeping, strain the syrup into a jar and let it cool before using.
Mocktail Assembly
- Fill a tall glass with ice. In a measuring cup, combine freshly squeezed grapefruit juice and lime juice. Add the cooled rosemary simple syrup and stir well.
- Taste the mixture and adjust the syrup for desired sweetness.
- Slowly top off with club soda or sparkling water, pouring gently to maintain bubbles.
Garnishing and Serving
- Garnish with a fresh rosemary sprig and a slice of grapefruit or lime on the rim. Serve immediately while cold.
