For the Salad
  • 1 medium Pumpkin fresh is best or butternut squash
  • 2 tablespoons Olive Oil or another vegetable oil
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Paprika or smoked paprika for extra depth
  • 1 medium Ripe Avocado ensure it's ripe or swap for hummus
  • 1/2 cup Feta Cheese or goat cheese, can omit for dairy-free
  • 1/4 cup Pine Nuts or chopped walnuts/sunflower seeds
  • 2 cups Arugula & Spinach or mixed greens
For the Dressing
  • 2 tablespoons Olive Oil or other vegetable oils
  • 1 tablespoon Balsamic Vinegar or red wine vinegar
  • 1 teaspoon Dijon Mustard any mustard variety works
  • 1 teaspoon Honey optional, omit for sugar-free

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the pumpkin into 2 cm (¾ inch) pieces. In a large bowl, season with salt, pepper, and paprika, drizzling with olive oil.
  3. Spread the seasoned pumpkin cubes in a single layer on a baking tray. Roast for about 20 minutes until edges are golden and tender.
  4. While pumpkin roasts, whisk together dressing ingredients in a small bowl until smooth.
  5. In a serving bowl, layer arugula and spinach, avocado, roasted pumpkin, feta, and pine nuts.
  6. Drizzle dressing over salad before serving and toss gently until evenly coated.
