Method

Step‑by‑Step Instructions
  1. Begin by choosing your pizza dough, either homemade or store-bought. If making from scratch, allow it to rise in a warm area for 1-2 hours until it has doubled in size.
  2. Divide the dough into four equal pieces and shape each piece into a ball. Roll out each ball into an 8-9 inch circle on lightly floured parchment paper.
  3. In a microwave-safe bowl, heat the cream cheese for about 30 seconds until soft. Stir in ricotta, pesto, lemon zest, and any desired seasonings until smooth.
  4. Place a generous spoonful of the ricotta mixture on one half of each dough circle, and sprinkle mozzarella over the filling, adding any additional toppings.
  5. Moisten the edges of the dough with water, fold over to create a half-moon shape, and crimp the edges to secure the filling.
  6. Prepare an egg wash by whisking together one egg with a tablespoon of water. Brush this mixture over the tops of each calzone.
  7. Preheat your oven to 475°F and bake calzones for 15-20 minutes until deep golden brown and aromatic.
