- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef for 5-7 minutes.
- Add taco seasoning and 1/4 cup of water to the beef and simmer for 5-7 minutes.
- Crisp the tortillas in a separate skillet for about 3-5 minutes on each side.
- Warm the refried beans and red enchilada sauce in separate pots over low heat.
- Spread refried beans on each tortilla, then top with seasoned beef, enchilada sauce, and cheeses.
- Bake in the preheated oven for 10-12 minutes, until cheese is bubbly and golden.
- Once out of the oven, add diced tomatoes, green onions, and olives as fresh toppings.
- Slice into wedges and serve with sour cream and guacamole.
