Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef for 5-7 minutes.
  3. Add taco seasoning and 1/4 cup of water to the beef and simmer for 5-7 minutes.
  4. Crisp the tortillas in a separate skillet for about 3-5 minutes on each side.
  5. Warm the refried beans and red enchilada sauce in separate pots over low heat.
  6. Spread refried beans on each tortilla, then top with seasoned beef, enchilada sauce, and cheeses.
  7. Bake in the preheated oven for 10-12 minutes, until cheese is bubbly and golden.
  8. Once out of the oven, add diced tomatoes, green onions, and olives as fresh toppings.
  9. Slice into wedges and serve with sour cream and guacamole.
