- In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and gochujang until well combined. Add the steak, ensuring it's submerged in the marinade. Cover and let marinate for at least 30 minutes or up to 8 hours.
- While the steak is marinating, whisk together mayonnaise, sriracha, lime juice, and honey in a small bowl until smooth. Adjust sriracha to your spice level and set aside.
- Heat a skillet over medium-high heat. Add the marinated steak and sear for 2-3 minutes on each side until golden-brown and reaching an internal temperature of 130°F for medium-rare.
- Remove the steak and let it rest for 5 minutes. In bowls, start with a base of rice, then add sliced steak, shredded carrots, cucumber, and optional kimchi. Top with chopped green onions.
