  • 1 medium Zucchini Sliced

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper. Arrange fresh fish on the tray and drizzle with olive oil.
  2. Combine minced garlic, chopped parsley, and dried oregano in a bowl. Sprinkle over the fish, then add salt and pepper to taste.
  3. Prepare the vegetables by halving the cherry tomatoes, slicing the bell pepper, and cutting the zucchini. Scatter around the fish on the tray.
  4. Squeeze lemon juice evenly over the fish and vegetables for added flavor.
  5. Bake for about 15–20 minutes until the fish flakes easily and the vegetables are tender.
  6. Remove from the oven, let cool slightly, and serve hot garnished with parsley.
