- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper. Arrange fresh fish on the tray and drizzle with olive oil.
- Combine minced garlic, chopped parsley, and dried oregano in a bowl. Sprinkle over the fish, then add salt and pepper to taste.
- Prepare the vegetables by halving the cherry tomatoes, slicing the bell pepper, and cutting the zucchini. Scatter around the fish on the tray.
- Squeeze lemon juice evenly over the fish and vegetables for added flavor.
- Bake for about 15–20 minutes until the fish flakes easily and the vegetables are tender.
- Remove from the oven, let cool slightly, and serve hot garnished with parsley.
