  • 2 cups Roasted Red Peppers Jarred or homemade
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil Extra virgin
  • 2 tablespoons Lemon Juice
  • 1 cup Chicken Broth Low-sodium recommended
For Seasoning and Garnish
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Herbs (Basil or Parsley) Chopped

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a blender, combine roasted red peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  3. Pour half the sauce into the greased baking dish. Place the tilapia fillets on top, and drizzle the remaining sauce over them.
  4. Bake for 20-25 minutes until the fish flakes easily with a fork and is opaque throughout.
  5. Garnish with freshly chopped herbs and serve with rice or seasonal vegetables.
