  • 1 pound beef, cubed chuck or shoulder cuts work best
  • 2 cups orzo pasta
  • 1 onion chopped medium size
  • 2 cups beef broth homemade or store-bought
  • 1 can diced tomatoes 14 oz
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add cubed beef, salt, and pepper, cooking until all sides are browned.
  3. Stir in dried oregano and basil, followed by diced tomatoes and beef broth.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add orzo pasta to the pot and stir well. Cover and cook for another 10-12 minutes or until pasta is tender.
  6. Remove from heat, let sit for a few minutes, and serve warm.
