Kofta Preparation
- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly for about 2-3 minutes.
- Wet your hands slightly and shape the mixture into small oval-shaped koftas, about 2-3 inches long. Place them on a clean plate.
- Preheat your grill on medium-high heat, around 400°F (200°C). Brush the grates with olive oil to prevent sticking.
- Carefully place the shaped koftas on the grill. Grill for about 10-12 minutes, turning occasionally every 3-4 minutes until cooked through.
- In a separate bowl, mix plain yogurt, freshly squeezed lemon juice, and a pinch of salt until smooth and creamy.
- Once the koftas are golden and cooked through, serve alongside the creamy garlic yogurt sauce.
