Step-by-Step Instructions
  1. Pat the pork chops dry and season both sides with salt and black pepper.
  2. In one dish, mix flour, garlic powder, smoked paprika, and additional seasonings. In another dish, whisk the buttermilk until smooth.
  3. Dredge the pork chops in the buttermilk and then in the flour mixture, shaking off excess flour.
  4. Heat oil in a skillet over medium-high heat and fry the pork chops for 3-4 minutes per side until golden brown.
  5. Cook the thick-cut bacon in the same skillet until crispy, then remove and set aside.
  6. Add butter to the skillet and melt. Stir in flour to make a roux, cooking for 1-2 minutes.
  7. Gradually whisk in warm milk and chicken broth, simmering until thickened, then stir in cooked bacon and season to taste.
  8. Serve the pork chops topped with the savory bacon gravy.
