Step-by-Step Instructions
  1. Heat a large cast iron skillet over medium-high heat, adding 2 tablespoons of vegetable oil. Allow the oil to shimmer.
  2. Add 1½ pounds of lean ground beef to the skillet. Cook for about 3-5 minutes until browned, breaking apart as it cooks.
  3. Add one diced small sweet onion and one chopped small green bell pepper to the skillet. Sauté until tender, about 3-4 minutes.
  4. Mix in 2 tablespoons of tomato paste, 3 cloves of minced garlic, 1 teaspoon of smoked paprika, 1 teaspoon of chili powder, and ⅛ teaspoon of cayenne pepper. Cook for 1 minute, stirring frequently.
  5. Pour in 1½ cups of beef stock and scrape the bottom of the skillet. Let it come to a gentle simmer.
  6. Stir in 1 cup of ketchup, 2 tablespoons of Dijon mustard, 2 teaspoons of Worcestershire sauce, and 1 tablespoon of brown sugar. Season to taste.
  7. Bring to a boil, then reduce heat to low and let it simmer uncovered for about 15-20 minutes.
  8. Spoon the filling onto toasted brioche buns and serve.
