  • 1 pound Ground Pork Opt for 80/20 fat ratio for juiciness
  • 1/2 cup Breadcrumbs Use gluten-free for an alternative
  • 1 medium Yellow Onion Can be swapped with shallots
  • 2 cloves Garlic Fresh cloves are best
  • 1/4 cup Parsley Freshly chopped
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika Smoked paprika is a nice twist
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Nutmeg Optional
  • 1/4 teaspoon Cinnamon Optional
  • 1/4 teaspoon Allspice Optional
  • 1/4 teaspoon Cayenne Pepper Reduce for milder flavor
For the Tahini Sauce
  • 1/2 cup Tahini Or swap with garlicky yogurt
  • 2 tablespoons Lemon Juice Freshly squeezed

Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for 20–30 minutes to prevent burning during cooking. Preheat oven to 400°F (200°C) if baking.
  2. In a food processor, blend yellow onion and garlic until coarse. Add parsley and pulse until paste-like.
  3. In a mixing bowl, combine ground pork, breadcrumbs, and onion mixture with salt and pepper. Mix thoroughly.
  4. Divide mixture into 8 portions, shape each into kebabs, and insert skewers if using.
  5. Choose cooking method: Air Fryer (375°F for 8–10 mins), Oven (Bake for 15–20 mins), Skillet (Cook for 8–10 mins).
  6. While kebabs cook, whisk tahini, lemon juice, and water until smooth. Adjust consistency to preference.
  7. Serve cooked kebabs with tahini sauce on the side. Enjoy!
