Ingredients
  

For the Pasta
  • 8 ounces Fusilli Pasta Feel free to use any pasta shape you prefer.
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil Can substitute with grapeseed oil.
  • 2 tablespoons Red Wine Vinegar May substitute with white wine vinegar or lemon juice.
  • 1 teaspoon Oregano Dried Italian seasoning works well as a substitute.
  • to taste Salt Adjust according to your taste.

For the Salad
  • 4 ounces Salami, diced Consider turkey or chicken salami for a lighter option.
  • 4 ounces Mild Provolone, diced Mozzarella or Swiss cheese can be substituted.
  • 4 ounces Fresh Mozzarella, diced Burrata makes an excellent alternative.
  • 1/2 cup Castelvetrano Olives, sliced Any green olives you prefer can work.
  • 1/4 cup Basil Chiffonade Parsley or spinach can be used for similar freshness.
  • 1 cup Marinated Baby Artichokes Canned artichokes can be utilized in a pinch.
  • 1/2 cup Roasted Red Peppers, diced Fresh bell peppers are a suitable substitute.
  • 1/4 cup Parmigiano Reggiano, grated Pecorino Romano can be used as a substitute.

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a rolling boil. Add the fusilli pasta and cook until al dente, about 8-10 minutes. Drain and set aside to cool completely.
  2. In a mason jar, combine extra virgin olive oil, red wine vinegar, oregano, salt, and pepper. Secure the lid and shake vigorously until emulsified.
  3. In a large mixing bowl, combine the cooled fusilli, diced salami, provolone, fresh mozzarella, sliced olives, and basil. Gently fold in the artichokes and roasted peppers.
  4. Pour the vinaigrette over the salad mixture and toss until everything is evenly coated.
  5. Transfer the salad to a serving platter and sprinkle with additional grated Parmigiano Reggiano before serving.
