  • 1 teaspoon Garlic Powder

  • 1 cup Fresh Basil
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Lime Juice or lemon juice
For the Tomato Salad
  • 2 cups Tomatoes chopped cherry or heirloom
  • 1 cup Corn optional
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive Oil for drizzling

Preparation Steps
  1. Mix together paprika, garlic powder, salt, and pepper in a small bowl. Coat the salmon fillets with this spice rub.
  2. Preheat your oven to 375°F (190°C). Place the salmon on a parchment-lined baking sheet, skin-side down. Bake for approximately 30 minutes.
  3. In a blender, combine basil, mayonnaise, lime juice, salt, and pepper. Blend until smooth.
  4. Chop the tomatoes and combine with corn, olive oil, salt, and pepper in a mixing bowl. Toss gently.
  5. Once the salmon is cooked, let it rest for a few minutes. Serve with the tomato salad and drizzle the basil sauce over the top.
