Step-by-Step Instructions
- In a small bowl, blend together brown sugar, Mrs. Dash seasoning, granulated garlic, black pepper, and kosher salt until mixed. Rub the spice mixture all over the chuck roast.
- Preheat your grill to 300°F (150°C), adding hickory or pecan wood chunks for a rich smoky flavor.
- Place the seasoned chuck roast on the grill grates away from direct heat. Smoke for approximately 15 minutes per pound until internal temperature reaches 136-140°F (58-60°C).
- Remove the roast from the grill, cover loosely with foil, and let it rest for 15 minutes.
- While the roast rests, lightly toast the sandwich buns. Spread Vidalia onion mayo or Dr Pepper barbecue sauce on each bun and layer sliced smoked roast beef.

Notes
Use a meat thermometer to ensure juiciness. Let the roast rest after smoking to redistribute juices. Choose quality buns for the best experience.
