Cooking Steps
- Preheat your oven to 325°F (160°C).
- Season the beef chuck roast with salt and black pepper.
- In a Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
- Remove the roast from the pot and set aside. In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
- Return the roast to the pot. Add beef broth, rosemary, and thyme. Bring to a boil.
- Cover the pot and transfer to the preheated oven. Cook for 3 hours or until the meat is tender.
- Remove the roast from the oven and let it rest for 20 minutes before slicing.
- Serve warm with your favorite sides.
