  • 2 pieces Avocados ripe
  • 1 can Black Beans rinsed
  • 1 cup Corn frozen or fresh
  • 1 small Red Onion or substitute with green onions
  • 2 tablespoons Lime Juice fresh
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 0.5 teaspoon Crushed Red Pepper adjust to taste
  • 0.5 cup Fresh Cilantro or parsley
  • 1 teaspoon Sea Salt
  • 1 teaspoon Cracked Pepper
For Frying
  • 2 tablespoons Olive Oil or any neutral oil

Method
 

Step-by-Step Instructions
  1. Mash the avocados by slicing in half and removing pits, then scoop and mash until smooth.
  2. Add minced garlic, lime juice, sea salt, cracked pepper, and crushed red pepper to the mashed avocado and mix well.
  3. Fold in rinsed black beans, corn, diced red onion, and chopped cilantro until combined.
  4. Heat a non-stick skillet over medium heat and add olive oil until shimmering.
  5. Take a tortilla and spoon half the avocado mixture onto one half, then fold and press down to seal.
  6. Cook folded quesadilla until golden brown and crispy, about 3-4 minutes on each side.
  7. Remove quesadilla from skillet, let cool, slice into wedges, and serve warm.
