Ingredients
  

For the Adobo Paste
  • 3 pieces Guajillo Chillies Substitute with New Mexico chilies if necessary.
  • 2 pieces Ancho Chillies Can be replaced with more guajillo or smoked paprika.
  • 5 pieces Chilies de Arbol Adjust to taste or substitute with crushed red pepper flakes.
  • 1 cup Water No substitute needed.
  • 4 cloves Garlic Cloves Fresh is best, but dried can work.
  • 1 whole Onion Use yellow or white onion for best results.
  • 1 can Tomato Canned tomatoes can be a handy substitute.
  • 1 tbsp Dried Mexican Oregano Italian oregano can be used with slight taste alteration.
  • 1 tbsp Ground Cumin Ground coriander could work as a substitute.
  • 1 tsp Black Pepper Fresh ground spices enhance flavor.
  • 1/4 tsp Ground Cloves Enhances seasoning.
  • 1/4 cup Apple Cider Vinegar Use red wine or white vinegar as alternatives.
For the Beef
  • 3 lbs Beef (Chuck Roast) Boneless short ribs can substitute.
  • 2 tbsp Avocado Oil Vegetable or canola oil are suitable substitutes.
  • 4 cups Beef Stock Vegetable stock can lighten the flavor.
  • 4 pieces Whole Cloves
  • 1 stick Cinnamon Stick
  • 2 pieces Bay Leaves Essential for authentic depth.
For the Tacos
  • 12 pieces Corn Tortillas Flour tortillas can be used but won't achieve same texture.
  • 1 cup Colby Cheese Try Monterey Jack or Chihuahua cheese if desired.
  • 1 cup Onion Fresh toppings based on preference.
  • 1 cup Cilantro Fresh toppings based on preference.

Method
 

Instructions
  1. Char a quartered onion in a dry skillet over medium heat for about 5 minutes until browned. Boil guajillo, ancho, and chile de árbol in water for 10 minutes until soft. Drain and blend the chilies with the charred onion, garlic cloves, chopped tomato, dried oregano, cumin, black pepper, ground cloves, and apple cider vinegar until smooth, creating a rich adobo paste.
  2. Pat the chuck roast dry and season it generously with salt. Heat a heavy-bottomed pot over medium-high heat and add avocado oil. Once shimmering, sear the beef for 3-4 minutes on each side until browned. Remove the beef and set aside.
  3. In the same pot, add the blended adobo paste and sauté for 2 minutes. Return the seared beef to the pot and pour in beef stock along with cloves, cinnamon stick, and bay leaves. Bring to a gentle simmer, cover, and cook for 2.5 hours on low heat until fork-tender.
  4. Remove the beef from pot and let cool slightly for about 10 minutes. Shred the meat using two forks and toss with a sprinkle of salt.
  5. Skim excess oil from the top of the braising liquid. Return liquid to low heat to warm. Dip each corn tortilla into warm beef fat briefly, then fill it with shredded beef and a sprinkle of Colby cheese. Fold to seal.
  6. Heat skillet over medium heat and add more avocado oil if needed. Fry the filled tortillas for about 2 minutes per side until golden brown and crispy.
  7. Arrange crispy birria tacos on a serving platter with a bowl of consomé for dipping. Garnish with chopped onion and cilantro. Pair with lime wedges and salsa.

Notes

Use quality beef for tender meat and control heat while searing for extra flavor. Skim fat off braising liquid and consider using two tortillas for support.
