  2. In a large mixing bowl, cream together ½ cup of softened unsalted butter and 1 cup of brown sugar for about 2-3 minutes. Add 2 large eggs, one at a time, then stir in 1 teaspoon of vanilla extract until pale and airy.
  3. Sift together 1½ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt into the butter mixture. Fold in the flour until just combined. Add the date mixture, folding until evenly incorporated.
  4. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or individual ramekins. Pour the batter in and smooth the top. Bake for 30-35 minutes until springy and a toothpick comes out clean.
