  • 2 cups Cooked Rice can use white, brown, or cilantro-lime rice
  • 2 pieces Chicken Breasts grilled and sliced
For the Veggies
  • 1 cup Corn Kernels fresh, frozen, or canned
  • 1 can Black Beans drained and rinsed
  • 1 medium Red Onion diced
  • 1 cup Diced Tomatoes
  • 1/4 cup Cilantro fresh
For the Flavor
  • 1/2 cup Cotija Cheese crumbled
  • 1 tbsp Chili Powder
  • 1 tbsp Smoked Paprika
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Lime Crema
  • 1/2 cup Sour Cream or Greek Yogurt can swap with dairy-free alternatives
  • 2 tbsp Lime Juice adjust to taste
  • 1 tsp Garlic Powder

Method
 

Cooking Instructions
  1. Heat a skillet over medium heat, add olive oil, and sauté corn kernels for 3-4 minutes until charred. Season with chili powder, smoked paprika, cumin, salt, and pepper.
  2. In a bowl, combine sour cream (or Greek yogurt), lime juice, garlic powder, and salt. Whisk until smooth, adjusting lime juice to taste.
  3. Grill seasoned chicken breasts over medium-high heat for 5-7 minutes on each side until cooked through and charred. Let rest before slicing.
  4. Assemble the bowls with rice, grilled chicken, sautéed corn, black beans, diced tomatoes, and red onion. Top with crumbled cheese.
  5. Drizzle lime crema over each bowl and garnish with fresh cilantro. Serve warm.
