  • 2 tablespoons Avocado oil or olive oil
  • 1/4 cup Honey or maple syrup for vegan
  • 2 tablespoons Sriracha adjust for spice preference
  • 2 cloves Minced garlic fresh preferred
  • 1 teaspoon Salt sea salt or kosher
  • 1 teaspoon Pepper black or white
  • 1/4 teaspoon Cayenne pepper optional
  • 1/2 teaspoon Crushed red pepper to taste
For the Vegetables
  • 1 cup Zucchini or bell peppers/broccoli
  • 1 cup Summer squash or seasonal vegetables
  • 1 cup Shredded carrots fresh or frozen
For the Base
  • 2 cups Cooked rice or quinoa; brown rice for fiber
For the Creamy Dressing
  • 1/2 cup Plain Greek yogurt or non-dairy yogurt
  • 1/4 cup Milk any plant-based milk
  • 1 teaspoon Onion powder or fresh onion
  • 1 teaspoon Garlic powder or fresh garlic
  • 1 teaspoon Dill fresh herbs as substitute
  • 2 tablespoons Freshly chopped parsley or chives/cilantro
  • 1 teaspoon Worcestershire sauce or soy sauce for vegan
For Toppings
  • 1 medium Avocado omit if desired
  • 1 unit Lime for zest; lemon as alternative

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and gather your ingredients.
  2. Heat 2 tablespoons of avocado oil in a skillet; sear chicken for 5 minutes on each side.
  3. Whisk together honey, sriracha, minced garlic, salt, pepper, cayenne, and crushed red pepper for the sauce.
  4. Sauté zucchini in the skillet for 1-2 minutes until tender.
  5. Layer shredded carrots and add chicken on top, drizzling with sauce.
  6. Bake in the oven for 15 minutes, stirring halfway through.
  7. Broil for an additional 3-5 minutes for caramelization.
  8. Let rest for 5 minutes, then cube chicken and toss with remaining sauce.
  9. Serve with rice or quinoa as base, topped with chicken and vegetables.
