For the Salad
  • 2 cups fresh broccoli chopped into bite-sized florets
  • 4 slices bacon omit for vegetarian option
  • 1 medium red onion finely chopped
For the Dressing
  • 1 cup mayonnaise or Greek yogurt
  • 2 tablespoons red wine vinegar or apple cider vinegar or lemon juice
  • 1 tablespoon sugar or honey
  • to taste salt
  • to taste pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add your short pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Chop broccoli into bite-sized florets. Boil water and blanch broccoli for 2-3 minutes. Transfer to an ice bath to stop cooking, drain and set aside.
  3. In a medium bowl, whisk together mayonnaise, red wine vinegar, sugar, salt, and pepper until smooth.
  4. In a large mixing bowl, combine cooled pasta, blanched broccoli, and chopped red onion. Gently mix and pour the dressing over the top. Stir to coat evenly.
  5. Cover and chill in the refrigerator for at least 3 hours or overnight to enhance flavors.
  6. Just before serving, sprinkle crumbled bacon on top and mix gently.
