Ingredients
  

Dressing
  • 1 cup Greek Yogurt opt for full-fat for richer texture
  • 1/4 cup Mayo can be omitted for lighter version
  • 1 teaspoon Chili Powder try smoked paprika for different flavor
  • 1 teaspoon Garlic Powder fresh garlic can also be used
  • 1/2 teaspoon Salt taste and adjust as needed
  • 2 Limes use both juice and zest
Salad
  • 8 ounces Rotini gluten-free pasta is a great substitute
  • 2 cups Corn char on high heat for best flavor
  • 2 tablespoons Avocado Oil can be swapped with olive oil
  • 2 cups Shredded Chicken cooked chicken or rotisserie works great
  • 1/2 cup Cotija Cheese feta is an excellent substitute
  • 1/4 cup Cilantro fresh herb, omit if you prefer

Method
 

Preparation Steps
  1. In a large mixing bowl, combine Greek yogurt, mayo (if using), chili powder, garlic powder, salt, lime juice, and lime zest. Whisk until smooth and well-blended.
  2. Bring a large pot of salted water to a boil. Add rotini and cook for 8 to 10 minutes until al dente. Drain and allow to cool.
  3. Preheat the broiler to high. Toss corn with avocado oil and a sprinkle of chili powder. Broil on a baking sheet for 3 to 4 minutes until charred.
  4. In the bowl with the dressing, add cooled rotini, charred corn, shredded chicken, and cotija cheese. Gently fold to combine.
  5. Transfer to a serving dish, garnishing with additional cotija cheese and cilantro. Serve with lime wedges.
