Ingredients

For the Pot Roast
  • 3 pounds Chuck Roast The star of the show, boasting marbling for that melt-in-your-mouth texture.
  • 2 tablespoons Olive Oil Perfect for searing; it adds a delicious crust and flavor.
  • 1 teaspoon Salt Essential for seasoning to bring out all the flavors; adjust according to taste.
  • 1 teaspoon Black Pepper Freshly ground pepper enhances flavor, creating warmth in every bite.
  • 1 medium Yellow Onion Adds natural sweetness during cooking; white or sweet onions can work too.
  • 4 cloves Garlic Fresh cloves are a must for depth of flavor; garlic powder is a lesser substitute.
For the Broth Mix
  • 1 cup Beef Broth Adds moisture and deep flavor; consider low-sodium options for a lighter touch.
  • 2 tablespoons Worcestershire Sauce Infuses a savory richness; soy sauce is a great alternative if you’re feeling adventurous.
  • 1 teaspoon Dried Thyme Provides earthy tones; using fresh will give a bolder flavor.
  • 1 teaspoon Dried Rosemary This aromatic herb elevates the dish; fresh rosemary can also be used for intensity.
For the Vegetables
  • 3 medium Carrots Contribute sweetness and texture; thicker carrots hold their shape better.
  • 1 pound Baby Golden Potatoes Their buttery flavor pairs wonderfully with the roast; any waxy potato will do.
  • 2 leaves Bay Leaves Add aromatic complexity; feel free to use fresh or dried varieties.

Equipment

  • slow cooker
  • Skillet
  • meat thermometer

Method

Step-by-Step Instructions
  1. Pat the chuck roast dry using paper towels, then season generously with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the roast for 3-4 minutes on each side until a rich brown crust forms. Transfer to the slow cooker.
  2. In the same skillet, add sliced yellow onion and sauté for 1-2 minutes until softened. Then, add minced garlic and sauté for an additional 30 seconds until fragrant. Pour in beef broth and Worcestershire sauce, scraping up browned bits. Stir in thyme and rosemary.
  3. Pour the onion and broth mixture over the chuck roast in the slow cooker. Add chopped carrots and baby golden potatoes on top, tuck in bay leaves, and season with additional salt and pepper if desired. Cover and cook on low for 6-8 hours or high for 4-5 hours until fork-tender.
  4. After cooking, carefully shred the pot roast using two forks and plate it alongside the vegetables. Transfer cooking juices to a fat separator and drizzle rich gravy over the meat.
